What?
Calabaza is minced yellow squash and zucchini, slightly dehydrated to maintain freshness. It mixes well with nearly all foods!
How?
Calabaza will come in 20oz or larger bags, allowing you to grab a handful and add to any dish.
Why?
When we share food, we create community. This spirit is no more alive than in the taco scene in the USA and Mexico. But, the majority of taco spots do not offer one vegetarian option.
What about frijoles?
Ok, frijoles are vegetarian. But they're not a good option.
Calabaza is the perfect nutrient-dense ingredient to add to your existing meals. Work in a restaurant or food truck? Ask customers if they want to try 'half calabaza/media calabaza' and see if they're interested.
Yellow squash and zucchini are almost flavorless—that's where you come in! At a minimum, try Calabaza sautéed with salt and lime. Slowly add water for softer Calabaza.
Do you already add minced pork, steak to dishes? Do you add chicken to packaged noodle soups? Try adding Calabaza instead.
Calabaza also works great with stir fries, pasta, macaroni and cheese, anything you might consider 'savory' will be made healthier if you add Calabaza.
For fun, add Calabaza to any dish an give it a new name:
Phalabaza = Pho soup + Calabaza
Here’s a comparison chart showing the nutritional differences between yellow squash and common taco proteins like chicken, pork, steak, and fish. It breaks down calories, protein, fat, and carbohydrates per 100 grams of each food.
Complex carbohydrate diets focus on whole, minimally processed sources. These diets are often rich in fiber, vitamins, and minerals and are associated with improved digestion, sustained energy levels, and reduced risk of chronic diseases.
Not yet. Hopefully, the food trucks you already love will embrace the Calabaza lifestyle and start adding it to their menus. Ideally, the price will not change! Calabaza is not a fancy food. It is not artisanal.
Place an OrderCalabaza will be shipped in resealable, free-standing, upright produce bags. Add your seasonings, or other veggies or meat, right into the bag and shake to marinate!
Calabaza will seamlessly integrate into existing food service workflows. The free-standing bag means it can store easily in a cooler or sit upright on a table.
Calabaza will likely be sold frozen, and stay fresh for several days after being removed from the freezer.
WHERE TO BUY
Calabaza will hopefully be for sale in supermarkets throughout the USA and Mexico.
