Joe is from New York City but now lives in Los Angeles, CA. While working in downtown Los Angeles (DTLA) he discovered a Vietnamese restaurant in the basement of his office building that serves great Pho. He went home and made his own version, adding Calabaza as the secret weapon. Here's the recipe:
1. Buy packaged Pho soup
2. Boil 16oz of water in a medium pot
3. Empty contents of Pho soup packet into pot
4. Throw a handful of Calabaza into the pot
5. Enjoy! Optional - squeeze lime into the soup for a citrus twist.
